Dry Mintesa


  • Handful of Mintesa fish
  • 1 tomato, chopped
  • 1 onion,diced
  • 5 tablespoons Zamgold cooking oil
  • Salt


  1. Using a bowl put mintesa in and add warm water and rest for 5 minutes.
  2. Drain out the water and rinse fish with cold water being careful not to break the fish. Remove from water and let drip dry in a colander.
  3. Add cooking oil on to a pan and once hot add in mintesa and fry until crispy both sides. remove from pan and set aside.
  4. In the same pan fry onions until translucent. Add tomatoes and salt and combine until a thick gravy is made.
  5. Add in minesta into the gravy mix and gently combine. let simmer for 5 minutes until nicely combined, remove and serve.
