Sweet Potato Dessert Fritters


  • 2 medium-sized sweet potatoes, must be peeled and cubed
  • 500ml coconut milk
  • 125ml coconut sugar
  • 125ml cup rice flour
  • 1 teaspoon cinnamon
  • Coconut oil for the pan


  1. Pre-cook the sweet potatoes and coconut milk.
    • When cooking the milk, put it on medium heat and then whisk through some of your coconut sugar, let the sugar dissolve.
    • Add in sweet potatoes, turn the heat up to medium-high.
    • Boil.
    • Start to mash up the sweet potatoes with the whisk – continue to break it down for 10 minutes.
    • Add to a mixing bowl when ready.
  2. Give the mixture a good mix.
    • Add in the rest of your coconut sugar and cinnamon into the mixture. Whisk well.
    • Mix in the rice flour. Whisk the entire mash and combine well.
  3. Heat up a pan.
    •  Once heated, reduce heat to medium and add some coconut oil to the parts where you will add spoons of the mix.
    • Spoon lumps of the mix over the oiled bits of the pan.
    •  Flip every 2 minutes until ready
  4. Enjoy.
