Meaty Minestrone and Roasties

Ingredients

  • 650–800g PnP beef shin bone-in
  • Salt and milled pepper
  • Olive oil blend, for frying
  • 1 packet (600g) PnP minestrone soup mix
  • 3 cups (750ml) beef stock
  • 1 can (410g) PnP tomato & onion mix
  • 1 packet (6) PnP Let’s Cook braai cheese & onion roasties
  • Chopped parsley, for serving (optional)

Method

  • Season beef with salt and pepper.
  • Heat a glug of oil in an ovenproof pot over high heat.
  • Fry beef in batches for 3–5 minutes, or until browned all over. Return all meat to pot.
  • Add soup mix, stir well and fry for about 5–8 minutes.
  • Pour in stock and cook for about 25–30 minutes with the lid on.
  • Tip in tomato & onion mix and cook for another 15 minutes.
  • Prepare roasties according to package instructions. Keep warm.
  • Adjust seasoning for the soup, sprinkle with parsley, if using, and serve warm with roasties on the side.
